As I mentioned in my previous post, I seem to be on a bit of a Greek kick lately! Or at least, what I consider to be Greek food...
Tzatziki, anything with dill, vegetables marinated in vinegar, feta cheese... I'm loving it all right now!
So you can imagine how excited I was when I stumbled across this recipe in Gina Homolka's Skinnytaste Cookbook!
Greek Salad Pita Pizzas...
Oh my goodness... YUM!
First of all, how cute are these things? I mean really. And then on top of that, they are delightfully zingy and fresh tasting! You really can't go wrong. And let's not forget how ridiculously easy they are to pull together in a short amount of time. That counts for lots in my books!
Personally, I'm super excited to give these a try in the summer when I'm getting all of my veggies from the farmer's market. But if using run-of-the-mill grocery store veggies is anything to go by, I'm sure I'll be thrilled.
Imagine for a moment if you will... pita bread, toasted to perfection in the oven, slathered in a delicious hummus, topped with a hearty slice of tomato and then sprinkled with bits of pepper, cucumber, feta cheese and red onion marinated in red wine vinegar...
Wow.
Now, for the truly adventurous, Gina does include a recipe for homemade hummus in her cookbook. I swear, I will one day attempt it, but I do have to admit that in this particular instance I used store-bought (gasp!).
Gina's recipe actually called for two layers of hummus, but as I was making this I learned that Scott is actually not a huge fan of hummus... huh. Are you noticing the beginnings of a pattern between this and my last post? Maybe Scott is a bit pickier than I had originally been led to believe these last three years...
Regardless of what you choose to use for hummus, veggies or cheese, you are going to LOVE these.
And if the success of this recipe is anything to go by, I can't wait to delve deeper into the Skinnytaste Cookbook!
