Looking for something to do with that leftover steak? How about Steak Quesadillas!
If you live in the area, you are going to want to check out the Bulk Cheese Warehouse for the most delicious steaks EVER!! Well, anything cold smoked there is worth a try. A-maz-ing.
Scott and I enjoyed a delicious steak and potato dinner one night, but we had a bit of leftover steak and so I was trying to come up with some other way to use it besides the same way we had just eaten it. Plus... there wasn't enough for both of us to eat it as a full meal.
So we settled on sharing the steak portion by making Steak Quesadillas!
Sooooo simple... cut your leftover steak into strips and toss in a frying pan with a teeny bit of olive oil and some onions. Once it starts to warm up, throw a couple handfuls of spinach in and sauté until the spinach is wilted. Meanwhile, in a separate frying pan over medium heat, warm up a tortilla shell (flipping once). Put a bit of grated cheese onto one half of the tortilla, then a scoop or two of the steak/onion/spinach mixture, followed but a little bit more grated cheese. Then fold the tortilla in half and press down. Cook for a few minutes on each side and voila!
A super delicious, super easy, and super quick Steak and Spinach Quesadilla! Or Steak and whatever-else-you-want Quesadilla...
And for dessert... how about a slice of fresh-baked banana bread with strawberries!?
Scott LOVES my banana bread. He will literally buy extra bananas just so that a few will go bad and I will have to make this for him. I will have to share the recipe with you all one day...
