Let's get the small talk out of the way first. What have I been doing in the last couple of months? Honestly, nothing too terribly exciting. Of course there was Christmas, were Scott and I each spent some quality time with out families while enjoying a few extra days off work. And then, perhaps the most exciting thing to take place... Scott and I went to Mexico for a whole glorious week of sunshine and hot weather!
Ahh, looking at this picture now makes me miss it so much more! Especially since we have been having some particularly terrible weather lately. I've had about enough of -30 and snow and shoveling and ice and winter in general.
But, as promised in my previous blog post from 1982... let's move on to the donuts!
How about some delicious vanilla donuts, baked to perfection and dipped in a super delicious chocolate glaze!? Yes please!!
I still can't seem to sell Scott on the whole donut thing, but I quite enjoy them! They are a nice little treat, and something different from the Banana Bread he is constantly asking for. And there are just so many different flavor combinations and options!
This recipe comes from a blogger I have been following on Instagram for a while... Sally's Baking Addiction. She also has a cookbook out now with a ton of dessert and baking recipes!
If you're interested in trying it out, here are the instructions:
Vanilla Donut with Chocolate Glaze
Donut:
1 cup flour
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp ground nutmeg
1 large egg
1/3 cup brown sugar
1/4 cup milk
1/4 cup greek yogurt
2 tbsp butter, melted
1 and 1/2 tsp vanilla extract
Glaze:
1/2 cup chocolate chips
2 tbsp butter
2 tsp corn syrup
2 tsp water
Directions:
1. Preheat oven to 350F.
2. Combine the flour, baking powder, baking soda and nutmeg in a large bowl.
3. In a smaller bowl, combine the egg, brown sugar, milk and yogurt until smooth. Pour the wet ingredients into the dry ingredients and stir until just combined.
4. Spoon the batter into a greased donut tray until they are about 3/4 full.
5. Bake for 9-10 minutes (or until they are puffed up and golden). Allow the donuts to cool slightly before glazing.
6. Meanwhile, place the chocolate chips, butter, corn syrup and water in a small bowl (big enough to be able to dunk your donuts). Melt in 20 second increments in the microwave, stirring after each time, until completely melted and smooth.
7. Dip the tops of the donuts in the chocolate glaze and leave to set. (If you want sprinkles, add them while the chocolate glaze is still wet)
